1 Introduction to Hospitality & Kitchen Safety Basics of the hospitality industry, kitchen workflow, and safety measures.
2 Food Hygiene and Personal Cleanliness Principles of food safety, cross-contamination prevention, and personal hygiene.
3 Kitchen Tools and Equipment Handling Identification, usage, and safe handling of knives, blenders, ovens, stoves, and other tools.
4 Vegetable Cuts and Knife Skills Knife handling techniques and various vegetable cuts like julienne, brunoise, dice, etc.
5 Stocks, Sauces and Soups Preparation of white and brown stocks, classic sauces, and international soups.
6 Rice, Pasta and Cereal Dishes Dishes like biryani, pulao, plain rice, spaghetti, macaroni, and lentil-based meals.
7 Meat, Poultry and Fish Preparation Selection, cleaning, cutting, marination, and cooking techniques (grilling, frying, baking).
8 Bakery and Desserts (Cakes, Pastries, Bread) Basics of baking: cakes, cookies, bread, pastries, and sweet dishes.
9 Continental, Pakistani and Chinese Cuisine Training in key international cuisines—e.g., grilled chicken, Chinese rice & noodles, traditional curries and BBQ.
10 Buffet Presentation & Plating Techniques Food presentation, garnishing skills, plate styling, and buffet layout setup.
11 Menu Planning and Costing Designing cost-effective menus and calculating ingredient costs and profits.
12 Final Project: Full Course Meal Preparation Preparation and presentation of a complete 3-course meal (starter, main, dessert) in an exam setting.
